Kathryn (Mitchell) Davis, age 60, passed away peacefully at her home on October 27, 2021. Kathy was born in Payson, Utah on May 16, 1961 to Paul and LaRue Mitchell; the youngest of three children.
Kathy was raised in Heber City, Utah, and graduated from Wasatch High School in 1979. Her relationship with her parents was always very special. Her mother was her closest friend. Her father was her hero and dedicated protector, always reminding her teasing older brothers to “leave that precious angel alone.” In truth, her relationship with her brothers grew through the years, and she cherished their special connection later in life. Kathy loved all of her extended family; aunts, uncles, cousins, nieces, nephews, and in-laws. Holidays spent with family members were particularly meaningful to her.
Heber City is also where Kathy raised a family of her own. Being a mother, and the contributions she made to her children’s successes, were her proudest accomplishments. She was incredibly devoted, encouraging, and selfless. She believed her children could do anything they set their minds to, and told them as much. Her motherly nature extended to her love of dogs. English pointers were her favorite, and several of them were dear companions during her life (and vice versa). The family deemed her the #1 Dog Mom.
Kathy had an amazing sense of humor and was an animated storyteller. She had a vibrant, outgoing, bubbly personality and was at her best when she was around other people. Her personality brought about many great friendships. She also used those traits in her professional life. Kathy was a tour guide on the Jungle Cruise in Disney World and for an underground mining company in Park City. She devoted many years to being a receptionist in the spa and salon industry, using her exceptional “phone voice,” adding her own personal touch to the clients’ experience that made her the go-to person for many, and helping others feel beautiful.
Kathy was very creative and a gifted crafter. She enjoyed floral design (almost as much as the people that ultimately received her floral arrangements). She and her dad, together, made and painted many wood crafts. Above all, she was extremely talented at sewing. In 1995, she designed and created the Mickey and Minnie Mouse heads that were used in J.R. Smith Elementary’s third grade Disney program for decades.
Kathy spent her last years in Gainesville, Florida, which she called “God’s Country,” and loved cheering on her Florida Gators.
Kathy is survived by her children Christopher (Cailin), Lindsey (Guy), Ryan (Jaime), and Eric; three grandchildren; and her brothers Gordon (Cherie), and Bruce (Patti). She is preceded in death by her parents Paul and LaRue Mitchell.
Friends and family are welcome to attend a visitation on Saturday, November 13, 2021 from 9:30 a.m. to 11 a.m. at Heber Valley Funeral Home located at 288 N Main St., Heber City, Utah. A memorial service will immediately follow, starting at 11 a.m. at the same location. Attendees will be invited to share memories of Kathy. Burial will be at the Heber City Cemetery, followed by a luncheon at Heber Valley Funeral Home. Friends and family may also visit the online guestbook at
