Edith (Jones) Brinkhurst, nicknamed Kit, age 97, died on Friday, 2nd January, 2026, in Heber, Utah, USA. She passed away peacefully in her sleep watched over by her daughter, Susan and son, Simon. She was greatly loved and will be missed by many.

Edith was born on 4th November, 1928 in Southwark, London, England. Her mother was Hetty Bertha Quinnell of Southwark, London, England, her father was Mesdom Albert James Jones of Daggerfontein Springs, South Africa. She is preceded by George Walls, her first husband, and Kenneth Brinkhurst, her second husband.

She was an accomplished seamstress, making many of her young daughter Sue’s clothes and in later years, beautiful quilts. Professional and highly skilled at both knitting and crochet, she made hundreds of items sold through her shop in Tooting, London, England.

She loved all animals. She never met a dog she didn’t immediately like, often times more than people. She had made and donated hundreds of blankets to animal rescue. She collected old bread and fed it to the birds daily. An avid reader, enjoying mystery novels. She was a master of the culinary arts including, but not limited to. baking and cake decorating. She spent much time in the garden and was always very happy there. Edith was an expert floriculturist specializing in orchids.

Edith served in the Royal Air Force during WWII and served in post war in Berlin, Germany. She travelled extensively to several continents and many, many countries. She not only spoke English, but also French and German.

She had a large family. Children; her son Simon Walls and daughter Susan Urban. Grandchildren; Bethany, Calvin (Chip), Jenny, Jonathon (deceased), Andrew, Brittany, Tabitha. Great-grandchildren; Lacie, George, Ivy, Daphne, Brynn, Abigail, Gage, Paxton, Jaydian, McKade, Dominic, Carter (deceased), Amayia, Eve, Breccan (Drey), Jeffery, Hannah. Great-great-grandchildren; Athena, and Mateo.

Following her cremation, a celebration of life will be held at Heber Valley Funeral Home. Friday, 23rd January, 2026 at 11.00 a.m. If you would prefer in lieu of flowers, please donate to PAWS animal society.
